In a bowl, season the leg with salt, pepper, and lemon juice. Let it sit in the fridge for some time to develop the flavours.
Then, slice the leg in steaks that fits the buns. Caramelise the leg in a pan.
Add cheese and let it melt down slightly. Set aside. In that same pan, fry the onion in the olive oil until golden and crispy.
To assemble the sandwich, cut the bun in half and add the leg, cheese, onion, tomato and lettuce to the bottom half.
Spread the mayonnaise on the top half and close the sandwich.
